Founded in 1922, Valrhona is a French premium chocolate manufacturer that has created, in 1986, the first chocolate in the world to reach 70% cocoa. For this, a rigorous selection of Grand Cru chocolate and a completely new process was necessary.
Another innovation from Valrhona is the fourth colour of chocolate: Blond. It was during a patisserie demonstration that the creative director of Valrhona forgot some white chocolate in a bain-marie, hence changing its colour to blond and creating smells of freshly baked shortbread and caramelised milk.
