Truffles
Most of our truffles and derived products are Tuber Melanosporum, the most revered black truffle in the world, also called the black winter truffle, the (black) Périgord truffle or the black diamond.
This variety of truffle is the best you can get in France, and comes directly from the area of production. This is the variety that gourmets and gastronomes prefer, with its powerful and complex aromas.
The truffle season being in winter, from November to February, and the aromas of fresh truffles quickly disappearing, we have chosen not to sell fresh truffles. Instead, we have decided to propose the highest quality truffles that are available all year round, the ones that are preserved using the best method. Only “cooked” or “boiled” once before being put into a jar, therefore preserving the aromas to a maximum, our preserved truffles have the closest taste to fresh truffles you can get.
The best way to enjoy truffles when not in season is to look for Tuber Melanosporum in jars and to make sure they have undergone only one “cooking” or “boiling” (first cooking or first boiling = première/1ère ebullition in French). If nothing is indicated, this means that the truffles have been cooked twice to extract the juice and have less taste.
You can also use the juice that is collected during the “boiling” to prepare sauces and to use in recipes.
None of our truffles or truffle products contain any additives or preservatives.
Please note that a preserved truffle will not taste exactly the same as a fresh truffle.
