Pork rillettes have been made in France since the 15th century, with pure pork slow-cooked until wonderfully tender.
These delicious pork rillettes are made with just 3 ingredients, pork, salt and pepper. The pork is cooked at a grandmotherly pace (hence the name Rillettes de Mémé) for several hours in a similar way to confit. The resulting shreds of pork are wonderfully rich, tender and extremely moreish!

Tip
